SafTeq Blue is an authentic yeast for the production of tequila and mescal. Fermentis selected this specialized strain of Saccharomyces cerevisiae in conjunction with CIATEJ AC, a research center in Jalisco, the heart of Mexican tequila production.
SafTeq Blue is a robust strain uniquely adapted to the fermentation of blue agave (Agave tequilana). It can be used to inoculate mosto or wash produced from either 100% agave, or a mixture of agave and sugar.
Traditional processing of agave for tequila production involves long cooking in brick ovens, which creates high concentrations of furfurals in the mosto. These compounds are critical to authentic aroma and flavor of agave-based spirits but also have an inhibitory effect on many yeast strains. SafTeq Blue can withstand high concentrations of furfurals, allowing for rapid and successful attenuation. It is also noted for its tolerance to adverse ferment conditions including high osmotic pressure, high ethanol concentration, and high temperatures up to 90°F/32°C.
